About the Role

At Dijiwa Sanctuaries, we believe that exceptional cuisine is a cornerstone of the soulful sanctuary experience we provide our guests. As the Head Chef at Arkamara Dijiwa Ubud, you will be the creative and operational heart of our FB Product department, crafting culinary narratives that celebrate Indonesian heritage while embracing global sophistication. This is more than a kitchen leadership role; it is an opportunity to shape the taste memories of our guests, turning each meal into a journey of discovery and delight. You will lead a passionate team in a serene, artistic environment, where the lush landscapes of Ubud inspire every dish.

In this role, you will be responsible for the entire culinary operation of our boutique sanctuary. Your key responsibilities will include:
• Leading menu development, design, and execution, ensuring each offering reflects Dijiwa's 'Sanctuary for the Soul' ethos through authentic, high-quality, and visually stunning presentations.
• Managing all kitchen operations, including inventory control, food costing, budgeting, and maintaining the highest standards of hygiene, safety, and sanitation as per Indonesian and international regulations.
• Recruiting, training, mentoring, and scheduling the kitchen brigade, fostering a culture of excellence, creativity, collaboration, and continuous learning.
• Collaborating closely with the General Manager and FB Service team to create seamless, personalized dining experiences, including special events, private dinners, and catering to specific guest dietary needs.
• Sourcing the finest local, seasonal, and sustainable ingredients, building strong relationships with Balinese farmers, fishermen, and artisans to support our community and ensure ingredient provenance.
• Ensuring consistent plating, portioning, and flavor profiles across all outlets, upholding the luxury standards expected of a Dijiwa property.
• Driving innovation in our culinary offerings while respecting traditional Indonesian techniques, contributing to our reputation as a destination for discerning food lovers.
